It is no accident that this Sangiovese-dominated blend has been labeled Chianti Colli Senesi. In the name we read an area, that of the Val d'Elsa hills, and above all the soul of a jovial wine. The sangiovese that grows in the San Gimignano area becomes lighter in body and is loaded with aromas of almost unexpected finesse thanks to the presence of soils that are often predominantly sandstone. Chianti is reminiscent of a wine of tradition, especially the everyday, it is the wine of every day, which is not synonymous with simple and minor wine, far from it, it is the wine of comfort and familiarity. It is the wine that never tires, just like the home-cooked meal. It is a strongly Chianti wine, whose vinification in stainless steel enhances the primary characteristics of sangiovese, the fresh hints of violets and the agile drinking.
Prefermentative cold maceration on the skins, which is followed by the start of alcoholic fermentation. Racking off takes place after 10-12 days. Malolactic fermentation in steel, followed by aging in steel for 6 months.
